        Sprigs of spring

        By Pauline D. Loh | China Daily | Updated: 2013-02-15 09:56

        Recipe | Pickled baby cucumbers

        Sprigs of spring

        Ingredients:

        1 packet (250 g ) baby cucumbers

1 tsp salt 300 ml white vinegar

        4 tbsp castor sugar

        Method:

        1. Trim off the flower ends of the baby cucumbers. The flowers wilt and do not add much to the pickle.

        2. Toss the cucumbers with the salt and leave on a colander or sieve to drain. Rinse after several minutes and dry the cucumbers.

        3. Place vinegar and sugar into a non-metal pot and bring to the boil. Switch off fire and leave to cool completely.

        4. Place cucumbers in a glass jar and pour cooled vinegar over. Leave overnight before eating.
