The soup of the stewed duck is fresh, light and?sweet. The recipe is very versatile and can be made with a combination of your favorite vegetables.
To make, skin the duck (as the skin contains a lot of unwanted fat tissue), cut in large chunks?and boil with ginger and leek ends for 1 hour in a pressure cooker. Prepare your choice of fresh vegetables that are in season. Duck meat goes great with carrots, Chinese white raddish, pumpkins, mushrooms and potatoes.?Add the meat and soup in a thick-bottom pot,?toss in?the vegetables chunks and cook until they soften.?Season with salt just before serving.
